Honey Roasted Plums with
Mascarpone and Pistachios

Serves 6
2 Tbsp. butter
1 c. honey
1 Tbsp. lemon juice
8 large firm plums, halved and pitted
½ c. mascarpone at room temperature
2 Tbsp. whipping cream
¼ c. finely chopped pistachios

Preheat oven to 400 F.
Combine honey, butter and lemon juice and heat until blended in microwave, about 2 minutes on medium speed. Place plums in a roasting pan cut side down and pour the sauce over them. Roast plums for 15 minutes until barely tender and beginning to turn brown on the bottom. Turn and roast 10 minutes longer. May be refrigerated in their syrup and re-warmed the following day. Mix and loosen mascarpone cheese with a few tablespoons of whipping cream and sweeten with sugar to taste. Slice plums and serve in individual fruit bowls, pour syrup over plums and add a dollop of mascarpone/whipped cream; sprinkle pistachios over the top.
