Gingerbread Waffles

13/4 cup flour

4tsp baking powder

1/2 tsp salt

1 tsp cinnamon

1 tsp ground ginger

1/4 tsp cloves

3 eggs separated

1c milk

1/2 c dark molasses

1/2 c brown sugar

1/4 c melted butter

Ginger Whipped Cream (see below)

Preheat oven to 200F

In a large bowl whisk together four, baking powder, salt and spices. In a medium bowl whisk eggs and mix well. Add liquid ingredients to dry, along with melted butter; mix until blended. Beat egg whites until stiff and fold into batter.

Spray waffle iron or brush butter before cooking each waffle. Bake in a hot waffle iron. Keep baked waffles warm directle on oven racks until ready to serve. Serve with Ginger whipped Cream:

  • yield 2 cups---2Tbs. sugar, 1 c heavy whipped cresm, 2Tbsfinely chopped crystalized ginger
  • Whip cream to form soft peaks; add sugar to cream and whip softly--fold in ginger after whipping and let stand for at least an hour (can be made the night before).
  • may be served also with maple syrup along with ginger whipped cream.
